Turkey Chili

Notes

Can add 1-15oz can of black or pinto beans that have been rinsed and drained. Add when you add turkey breast.

Ingredients

  • Large onion, chopped 1
  • Large yellow bell pepper, chopped 1
  • Garlic, crushed 2
  • Chipotle chiles in adobo, chopped 1 can
  • Chipotle Sauce 1 tsp
  • Preferred cooking Oil (coconut, grapeseed, vegetable) 2 tbsp
  • Chili powder 1 tbsp
  • Ground cumin 1 tsp
  • Pepper 1/2 tsp
  • Stewed or crushed tomatoes, low sodium 1 can (14.5oz)
  • Chicken broth, low sodium and fat free 1 14.5oz
  • Chili sauce 1 bottle (12oz)
  • Deli turkey breast, chopped 1 lb
  • Scallions, tomato, cheese and sour cream or yogurt for Garnish

Directions

  • 1.

    In a large stock pot, cook onion, bell pepper, garlic, chiles and adobo sauce in hot oil, until onions are softened. Approximately 5mins

  • 2.

    Add chili powder, cumin and pepper. Cook, stirring, approximately 2 mins

  • 3.

    Next, add tomatoes, broth, chili sauce and diced turkey

  • 4.

    Bring to a boil

  • 5.

    Reduce heat to medium and cover. Let simmer for 20mins

    Serve with desired garnishes
